Ancho Glazed Roasted Chicken


ingredients

  • 2 tablespoons vegetable oil
  • 1½ pounds bone-in chicken thighs, seasoned with salt and pepper
  • 1½ pounds chicken legs, seasoned with salt and pepper
  • ½-¾ cup Pomegranate Plum Ancho Sauce 
  • 2 fresh plums, cut into wedges, if desired

directions

  1. Preheat oven to 425°F. In a 12-inch ovenproof skillet, heat oil over medium-high heat. Add chicken and sear on all sides, about 6-8 minutes.
  2. Transfer skillet to oven and bake 20 minutes. Add plums to skillet, if desired. Pour Pomegranate Plum Ancho Sauce over chicken.
  3. Continue baking 20 minutes or until internal temperature of chicken reaches 165°F on an instant-read food thermometer.
